Suitability of Apples Flesh from Different Cultivars for Vacuum Impregnation Process

The article evaluated the suitability of 14 apple cultivars for vacuum impregnation (VI) process based on comparison physicochemical properties fresh and impregnated tissue. cube-cut was in a solution close to isotonic composed 0.5% ascorbic acid, citric 10% sucrose. VI conducted with time absolute pressure at 10 min 15 kPa, restoring atmospheric 5 relaxation min. content acid after increased by 3 25 times range 73.5–130 mg/100 g, while mass gain samples ranged from 15% 34%. On basis Pearson correlation, it found that negatively correlated firmness cubes (r = ?0.85). favorable features terms vitamin C content; hardness; browning index (BI) are Cortland; Shampion; Ligol.
